The coffee growing in the state of Espírito Santo has some peculiarities that differ from the other regions producing Arabica coffee in Brazil because it has a diversity of edaphoclimatic conditions that influence the final quality of the bean. This study aimed to demonstrate and quantify the effect of solar radiation and of different forms of wet process on the final quality of Arabica coffee in crops located in the altitude range of 950 meters, in order to understand what would be the best wet processing methods for the coffee cultivated to the East (sun-grown) and coffee cultivated to the South-Southeast (shade-grown). The results indicate that shading has a significant effect on the final quality of the Arabica coffee, as well as the type of wet process used to process the beans after harvest. Therefore, there is a need to study in depth the factors related to the processing, edaphoclimatic, and relief conditions inherent to mountain coffee cultivation. |

Baseado na necessidade de esclarecer as questões sanitárias de ordem alimentar, para a regularização da produção de alimentos processados pela agricultura familiar e o licenciamento de agroindústrias rurais de pequeno porte na área de atuação do Projeto
Estruturação e Fortalecimento dos Setores Produtivos da Agricultura Familiar do Norte do Espírito Santo ? Tecsocial, uma estratégia interinstitucional foi implantada, por meio de articulações junto à administração pública municipal, técnicos e produtores, a fim de discutir e adequar as leis vigentes. Assim, espera-se que por meio de seus serviços sanitários, atuem de forma competente e organizada, minimizando o gargalo do processo de comercialização dos produtos da agricultura familiar. Essa estratégia interinstitucional foi adequada e reaplicada nos municípios oportunizando a transformação social do meio rural tendo como resultado a criação de leis municipais sanitárias em três municípios e a modificação na redação dessas leis em outros seis municípios.
Based on the need to clarify food sanitary questions to regularize the production of processed foods by family farms and licensing of small rural agro-industries in the area of operation of the Project Structuring and Strengthening Family Agriculture Productive Sectors North Espírito Santo - Tecsocial an institutional strategy was implemented. The methodology consisted of joint meetings with the presence of the municipal government, technicians and producers to discuss and adequacy of existing laws.
